Yes, it will work fine.
Recently, I set up several VPSes to generate strategies. I tried from Windows Server 2022 up to Windows 10.
I was most happy with an old Windows 10 Enterprise from 2018.

just wondering if windows server works the same for Ea Studio in generating strategies, or is lower/faster given the same amount of RAM compared to a notebook/laptop.

It seems even with a high amount of RAM, the strategy generation is slow.
